dive. (the restaurant, not the fancy swimming trick I've yet to master)

While most people would probably think from the topics of this blog that I am a lardo pushing 250 strolling around in a Rascal scooter, I actually enjoy the occasional "healthy" meal. Unless I'm hungover or hangry (hungry + angry), I tend to try and eat healthy during the week. This is not to be skinny (Lord knows I aint), it's so that I can binge without guilt every. single. weekend. So, after pilates yesterday (shoutout to The Pilates Barre, the best workout place in Dallas), my sister and I decided to walk over to Dive in Snider Plaza.

Dive has been open for about a year, and I've eaten there several times, but I hadn't found the one item that I would order every day. Until yesterday. Sweet mother of all turkey burgers, this one is the shiz. Below is the description, taken from their website. Please note: it says "aioli", aka I can eat it (on the side) and not think that I'm eating sickass mayo. The burger isn't in the shape of a regular burg, it is on a ciabatta loaf that tastes likes buttery heaven. There are grilled onions on top, and red onions mixed into the meat.  Had I been alone, I probably would have cried b/c it was so tasty. (I don't cry in public, and don't believe in human emotions).

SOUTH BEACH TURKEY BURGER $12

Sriracha aioli, smashed avocado, romaine lettuce, grilled onion, tomato & jack cheese - on a ciabatta bun

Lauren got the ahi sliders, which are almost as delicious, but for realz, the turkey burger made me consider giving up regular cheeseburgers. For like a week at least. The sandys come with plantain chips, which at first sicked me out, because I thought they would taste like bananas, but they don't. They taste like potato chips and are scrumptious. Go to Dive now. Get a turkey burger (and some hummus w/ extra crispy crackers). You won't regret it.

AHI TUNA SLIDERS $13

Seared ahi tuna burger, arugula, avocado, tomato, red onion & garlic aioli on a ciabatta bun

Now for the good stuff... You know how in every People/US weekly they always have a celebrity expose what is in their purse. Well, since no one, ever, has asked what's in mine, I figure you all must be DYING to know. Please note: in order to give full disclosure, nothing was added or removed from my purse. Although I'm sure after this, I will wish it had.
What the Beast looks like from an overhead view.

Alright, here we go...
THE SHAMEEEEEEEEEE

-the usual suspects, keys, gum, eyeliner (for the occasional Madonna fake mole, not for eyes)
-orange iPod (hook 'em!)
-Parigi receipt (go there now)
-Hollywood tape
-Great American hero receipt
-mascara
-assorted jewlery, mostly only one half of an earring set
-5 Shockers (formerly Shock Tarts) rolls. You can NEVER have enough Shock Tarts.
-Special K bar (cause a fatty gotta eat somethin gud)
-wallet
-generic adderall XR aka amphetimine salts (see, I'm not a Parkie who's into labels)
-sunglasses case (would love to know where the sunglasses that go in it are)
-contact case (I'm blind)
-Flashlight (I'm secretly into being the female Inspector Gadget, I look fabulous in a beige trench-coat)
-And lastly, a spoon. Don't judge.

I know you're judging....

Until next time, peace, love, and shockers (y'all are all sick).

Roadhouses (Tillman’s and otherwise)**

Simply put, Tillman’s Roadhouse is the shit. Awesome atmosphere. Awesome food. Awesome wait staff. Before I get in to the stories/food details, let me just list what all our lardass table ate.

They bring you out truffled popcorn and peanuts to start (A-MAZE-ING) then Todd sent us over two starters:

1) Trio of Fries: parmesean black pepper Kennebec fries, chili dusted purple Peruvian fries, and smoked salt scented sweet potato fries, served with homemade spicy ketchup and horseradish pickle mayo (of course I decided it wasn’t mayo, it was aioli, so I tried it).

2) Fried housemade bread and butter pickle cup with spicy brown butter

Then, we ordered, and all went really, really light......

1) Me: Chicken fried hanger steak with garlic whipped potatoes; bacon braised green beans and charred poblano gravy.

2) Crawford: Grilled PGA beef ribeye with truffled goat cheese tator tots. (Not as good as everyone elses…Should’ve ordered the Venison Frito Pie idiot.)

3) Dad: Chipotle BBQ smoked pork ribs with white cheddar mac-n-cheese. (They were amazing and he gave me a bite and tricked me in to eating a piece that was only fat…I wasn’t upset)

4) Megan: Off the Hook special (WEAK ORDER): Some striped sea bass with veggies. Almost made her leave the table. (Don’t go to dinner with our family and order non red-meat or pork. It’s just mean). Actually, its prob against her religion or something in her culture to eat meat.

5) Lauren: The Landy Burger—sirloin foie gras burger with Madiera aiolo, arugula, goats milk gouda cheese on a house baked Kaiser bun and goat cheese tator tots. (I think she ordered it saying “I’ll have the lady burger thinking she was sounding skinny”—sorry La, fail.)

6) Josh: same as me

7) Me again: Side of white cheddar mac-n-cheese (STOP JUDGING IT WAS MY BIRTHDAY)

So—we dove in, and ordered our 3rd and 4th bottles of wine, and everyone was in awe. The chicken fried steak was the most fat, delicious thing I have ever eaten (and I have eaten a lot of fat, delicious things), and I quickly scarfed down my mashed potatoes before anyone got a chance to try them. Seriously, it was 5 of my favorite nouns/adjectives on a plate: BACON, potatoes, FRIED, steak and GARLIC. Oh, and my number 1 favorite thing: gravy. Sweet Jesus I just sounded like that fat girl Nikki Blonsky (Tracy Turnblad) from Hairspray (and now the “star” of the ABC Family original series, Huge). Sidenote: Nikki Blonsky is Hungry and Mad

Everyone enjoyed their meals—how could you not, the main ingredients were butter and red meat…seriously, my dream come true. Once we all were drunk on red meat and wine, we decided that we would be kidding ourselves if we didn’t order dessert…Little did I know, my starving sidekick Lauren had already ordered the Tableside S’mores and the Cookie tower…Please listen to these descriptions, they don’t even do the desserts justice..
S’mores Tableside: Orange, maple and coffee marshmallows, cinnamon grahams, dark chocolate bark.. (The bring you your own tableside fire and skewers and you get to do it yourself! Legit, and lots of fire.

And then Peanut Butter and Chocolate Chip cookie tower with banana ice cream, chocolate icing, and chocolate sauce.
After we finished, the worlds most uncomfortable/akward/sexually inappropriate convo took place. Let’s just say my dad and boyfriend are going into business together and leave it at that. If you weren’t there then ask someone, it was amazing. **

GO TO TILLMAN’S. It is delicious. Don’t eat all day then go, and have zero shame. They also have games to play while you wait…

Solid food blogging group...

CFA Spicy Chicken Sandwhich Should Be It's Own Food Group.

I spent all day yesterday getting mentally prepared. At one point (after I had opened a bottle of wine by myself) I found myself standing in front of my bathroom mirror psyching myself out. On previous posts I had thought I’d hit a low point, but 2 glasses deep in cabernet, standing alone in my bathroom contemplating a speech TAKES THE CAKE. So I decided to pick out my outfit for what will probably be the most important day of my life (Screw babies and marriage—I get to go to a special presentation for a sandwich.) I decided to go with leopard print, so that the cows would immediately think of me as their animal friend and offer me free hugs/food. I got both. Double Score.
Cows Love Their Own...
So, at about 10:55 this morning, Lauren and I got on Central and bee-lined it for The Richards Group. We arrived and much to our surprise, the joint had VALET PARKING. We were greeted by that magical Chick-Fil-A cow and a greeter inside and ushered up to the 11th floor. Stepping out of the elevator, Lauren and I looked like fat fourth graders that had gotten off on the wrong floor. Pretty much everyone there was an adult, give or take 5 people. We checked in under “Dining in Dallas Blog” and took what can only be described as the most unfortunate looking photo in the world. The cow grabbed us and they managed to snap a photo of what appears to be a fat black woman and her 7 year old kid. Woof. Anyways, we were given “Media Pass” nametags and went on our way to get our Lemonade. Best lemonade in the world (besides Eatzi’s pomegranate lemonade). We were told to mingle until the presenters were ready to give their speech, so we did and took dorky photos like we were Asians at the capitol.

The presentation lasted about 10 minutes and then we were able to TAKE THE FIRST BITE. In unison. So imagine a bunch of middle-aged, salivating patrons, elbows up to the tables, diving in to the spicy abyss that was the sandwich. Silence. Then the murmurs grew, and all Lauren and I could contribute was creepy eye contact with each other as we ravaged the sandwiches.

The best fast food spicy chicken sandwich that I had ever tasted before this was Wendy’s. We all know it’s legit, and awesome w/ their bbq sauce. Well, F off Wendy’s, there’s a new Sandwich in town, and it kicks ass. The Chick-fil-a sandwich has the spicy sauce on the outside of the chicken, then is fried, so there is no mess, and no sauce needed. And I am a saucer. Even the plain sandy requires some Polynesian sauce, but this one needs nothing. Except maybe another patty (oink). It’s spicy enough to make you need a drink and they were there to offer refills on lemonade and tea. Overall, probably one of my fattest Field Trips ever, but completely worth it. I might be on the news since I looked up at one point and there was a WFAA news camera in my face as I was shoving the creation in…Please don’t judge, you wouldn’t have stopped eating this thing even if Beyonce walked in the room.

The next step for chick-fil-a will be to make this sandwich translate across the board, because I would not mind diving in to some spicy chicken fingers on a lazy Saturday.
They gave us chips instead of fries--only downside.

The best decision I have made this year was to write this fatass blog. Hopefully it will bring more invites, free stuff and a movie deal (because everyone wants to sit in a theater and watch some random eat for 2 hours). If everything goes my way, in 5 years I will be hosting my own TV show that will be a mix between DDD, Wipeout, and Man v. Food.

The invitation

This poor cow got hot and had to sit down on the bench outside...I feel ya buddy. BEEN THERE

Pizza and Bengal Cats

I’ve been craving Pizza since I got the big news for a while. And not like Dominos or some chain pizza, but legit Dallas Pizza. And since I know someone who likes to HATE on Dallas all the time, I decided that I would introduce him to some of the finer things our wonderful city has to offer (besides me, duh).    So, I got online and Googled “Dallas’ Best Pizza” and decided to go with Guidespot.com’s 3rd favorite pick, Pizza by Marco. Sad story—I just typed in “Dallas B—“ and it filled in the rest for me. I hate that Google knows I’m slightly overweight and have a fetish for pizza.  Located in the Preston Royal shopping center, this little joint is easy to miss, since it has a tiny sign and is in the corner. I got online and was able to order my pizza there, which is always nice, since most pizza order takers manage to royally F up every order I place. So I ordered us a medium pepperoni  (always gotta get something with pep, it’s a standard) and the Milano Chicken Alfredo Pizza, a light choice that features Alfredo Sauce, Chicken, Mushroom, Fresh Garlic and Parmesan. Hefty, cheesy and LEGIT. Lets be honest—with pizza I am usually full by the second slice, but I managed to wolf down 4 slices before even diving in to my I Heart Yogurt dessert. So, the pizza comes on crispy thin crust, some of it is burned a little and has flour dust on the bottom, which is always good in my book, because then you know it was cooked in a wood oven. The pepperoni was just average, I really like to order pepperoni, mushroom and jalapeño, (yes, that is an enyay) but some idiot is sick of the last two ingredients so I had to just order plain pep. So, we ordered the pizza around 7:30 and picked it up 30 minutes later. I walked in to the restaurant and saw my sick sad future: A girl was eating with what looked like her mother, and was sitting on two chairs. I literally saw my future 2 20 years from now. Me and my mom grabbin a slice on Thursday night while my Dad cat-sits for me. Long story short—Pizza by Marco is the shit, and when I can take a break from shopping online for Bengal Cats I will start making “Best Of” lists for D-town, and P by M will most definitely be on it.

More about Bengal Cats. They are the shit. They look like tigers/cheetahs but only weigh around 25-30 lbs (how much my actual cat weighs). I am considering putting a paypal donation link on this site so that all you wannabe fatties can donate monies so I can buy this $2,000 playmate. When I eventually get dumped b/c I am too open with my fatass-ness, this guy is my next conquest. What a babe. Plus, he has a Bengal.

Chubby Chatter...Chick-Fil-A

I have successfully landed every slightly overweight, sometimes lonely girl/boy's dream. On June 2, I will be attending a media testing for the Chick-Fil-A Spicy Chicken Sandwhich at the Richards group. 5 days before you Plebians get to try what I can only imagine is like sex on a bun with two pickles, I will be lining up to sample the treat during a work day. The tentative invite says it is from 11-1, so of course my chubbo brain is hoping that they will have some type of Man vs. Food challenge that I can enter and see if I could non-stop eat spicy chicken sandys for two hours. I bet I could average about a sandwhich every 8 mins, which is a total of 15 sandys (6,750 cals, 255 grams of fat). Just your average daily snack binge. Or at least my average calorie/fat intake on a Sunday. Anyways, I'm sure I will only get one, but I will for sure line my pockets/purse/fanny pack with foil to keep any sandwhiches that are left warm til I can share the wealth. Anyways, my Beefy Biography is sure to continue, especially since I will be getting my photo taken with a celeb (the chick-fil-a cow). The official countdown til the public release of the Worlds 2nd Greatest Idea (the first being the TI-83+ calculator that you could use to cheat and play games with in high school), is 19 Days, 10 hrs, 6 minutes. But suck it, average Joes, because I try it in 14.

P.S. Should I buy some Chick-Fil-A gear? I do look good in ball caps... Chick-Fil-A Gear

Rice Pudding and Spit Up

“There was also a meal that involved rice pudding, 5 lbs of meat and spitting up at the table. That will come shortly.”
I guess I blacked out when I wrote that, because I totally forgot to write about the most memorable eating experience in Paris.

When we first got to the restaurant, Chez L'ami Jean, we all were a little sketched out. They sat 5 of us at a table that was meant for 4 anorectics, and then handed us sticky binders written only in French, that I guess were the menus. Well, since fromage, champagne, and baguette are the only words in my French vocabulary, I got flustered. For those of you who have not had the pleasure of dining with me, let me explain a little something to you: I get menu anxiety, and I get it bad. If a menu has more than 2 pages, chances are I cry a little bit when I get up to go to the restroom. Basically, it’s all the symptoms of your average panic attack, but completely obese and unjustified. So, imagine me with the equivalent of the Cheesecake Factory’s menu, but not a single English word. I started to sweat, which made me nervous, which made my sister Mary anxious, which then cause Lauren to get worried. What the F were we going to eat? As I began contemplating culinary suicide in this small French bistro, a gentleman who looked like Massimo (Alex Karev) from The Wedding Planner, came to our rescue. He began reading the menu in French and then translated everything into English. I became lost in his translation, and as I was contemplating taking him as my lover, I heard him say something along the lines of “4 kilograms of rare prime rib/rib eye/something steak.” I would pay five million dollars to have a picture of us five fatties staring back at him in amazement. Fat moment number 1. This man was now not only my lover, but also my sisters and mothers as well. Is that awkward? Anyways, so my four chunky comrades ordered that, and I decided to be slim and trim and order the pork chop with mashed potatoes. Mom ordered chicken liver pate, and they brought it to my place setting instead of hers. The only way to ruin a baguette: top it with raw chicken parts…VOMIT. Anyways, Mary and Lauren got calamari, which sounded like a solid choice. Wrong-O, turns out, their version of calamari looks like influenza on a plate.

On to the main part: the meat. For you guys who are metric-system challenged, 4 kilograms of meat is about 8.8 POUNDS of pure steak. They brought out a shallow cauldron of meat and veggies, and I watched four ladies turn in to sumo-wrestlers at a buffet.

It. Was. Awesome.

My pork chop was good, but it took all of about 5 minutes for me to give in to the feeding frenzy. It’s not so much that it was delicious, it was, but the fact that 5 pretty well mannered women (girls) went to town on 10 lbs of meat that night. Fat moment number 2.

Sadly, the meal did not end there. We were all almost unconscious, and then our waiter forced us to get dessert. (By forced us, I mean he said, would you like dessert, and none of us said no). So, this restaurant was known for their rice pudding, and since I’m not a huge fan of rice or pudding, this sounded like a definite miss. Rice pudding just sounds like something that Fat Bastard would have really enjoyed. So, when they brought out a giant bowl of creamy chunky pudding, I was not interested. So I grabbed a pistachio macaroon and sat on my fat ass while I watched the werewolves devour the pudding. When they went on and on and on about how good it was, I felt left out, so I gave it a whirl. Turns out, rice pudding is delicious. You top it with crunchies and brown sugar and you might just have the official snack of the Overweight Olympics. Fat moment number 3. DELICIOUS. So, while we were still eating I said something funny, most likely about food or macaroons, and made my mom laugh. I should probably tell y’all that my mom has sort of a problem when it comes to eating/choking/functioning during meals. Most of the time we just let her choke because we are used to it and she can handle it. Well, this time she laughed and choked all while taking a sip of wine, and then spit up the wine at the table. My sisters, well, one sister, freaked out and punched me at the table for not getting up to help mom (it’s okay, Mar, I know it was just roid-rage from all the steak), and it hurt. The meal was basically over at that point, and we paid, took pictures of mom’s mis-hap, and rolled ourselves into a cab.

Just a little red wine in her rice puddin bowl...

I might pee I'm so happy

I was posting about a decent time at Primos when I heard the magical sounds that I haven't heard in 8 months...the ICE CREAM MAN SONG. Its almost as good of a sound as hearing City Highs "What Would You Do" (if your son was at home, crying all alone on the bedroom floor cause he's hungry...) on your way to work, which is exactly what happened to me this morning. Anyways, there is literally NOTHING going on at work so I ran outside and flagged the jolly tejano down so that I could enjoy a nice popsicle. I studied the board trying to decide if I should go for the zany screwball, or the more original Bomb Pop. I decided on the bomb pop, but once I saw that they had Cry Baby Sour Bomb Pop with a gumball tip, I was in heaven.

So, I paid the man 2 dollars (I could have bought an entire box of these at Fiesta for a dollar), and skipped back inside. Well, I thought I was going to be able to hide the fact that I left the office to visit the ICM (Ice cream man), but I locked myself out and had to ring the doorbell. Fat moment. But anyways, here I sit, eating my Bomb Pop, with a red mouth, and a sticky keyboard. Good thing my sister isn't here, I get to trade my popsicle-soaked keyboard with hers. Legit

My Perfect Threesome

If bread were a boy and cheese a girl I would be extremely sexually confused. Fortunately for me, the two met in perfect harmony in Paris last week. Parisian women are always praised for not being fat, and the only reason they aren’t WHALES is because they smoke 5,000 cigarettes a day and pretend they aren’t hungry. Basically, French women are bitches. I, on the other hand, am not a bitch. In fact, I’m probably the nicest, prettiest, skinniest, and funniest person you know, and if you don’t agree, then YOU are the bitch. Anyways, I went to Paris with my mom (a cougar), and my three sisters (all equally enticed by gourmet food as me, just lacking the compositional skills that I possess). We (or most of us) had three goals: eating, drinking, and shopping. Side note—shopping after 2 baguettes and 2 bottles of wine either makes you spend more or cry more because nothing fits. Anyways, on to the food.

The best thing about French food is that they expect you to order a starter, an entrée and a dessert. They also think it is weird to not have champagne as soon as you sit down. I have found my perfect world.

Z Kitchen Gallery: This place was supposed to be “French-Asian” Cuisine. Well, I left hungry and my little sisters noodles tasted like soap. I can’t remember what I got, but I remember several baguettes. Long story short, keep the Asian in Asia, and focus on breads, cheeses and meats.

Les Violon d’Ingres: BY FAR THE GREATEST PLACE IN PARIS. You walk in and your table setting is set up so that you can drink red wine, white wine, champagne and water without being judged. Sheer perfection. They also greet you with a giant bread basket that included hot baguettes, cheese puffs-think donut holes but savory with melted cheese. Literally almost took my clothes off at the table (but I was wearing spanks, and that would not be pretty…). Adriane and I started off with a light dish of 2 soft boiled eggs served with truffled toast, lardons (thick cut bacon that puts American bacon to shame), and mixed greens. I honestly ate more as a starter at every meal than the average breakfast. Chunky.
Anyways, I could have gotten the sea bass, but get real; there was a rack of lamb served with thinly cut potatoes right below the fish. I know, I know, I’m so dainty, you’d never expect me to get MEAT, but I splurged… By dessert I think I’d had enough champagne that I’d have eaten a worm, but I got crème brulee because I am a child and like the hard shell—it reminds me of that hardening chocolate sauce that makes a shell on your ice cream. Besides that, crème brulee is weird and tastes like pudding gone wrong. After our 3 (or 4th?) bottle of Tattinger, we decided we needed to leave. Sadly, the only pictures I have from this meal are ones of empty plates…

Frenchie: The Asian and the Frenchman sitting next to us put their menu up as a partition so that they could whisper about us. You know how I feel about the mixing of those two cultures; see the tidbit about Z Kitchen Gallery. This place was okay, really more cute than good. It was a set menu, and you either ordered an antipasto salad or pea soup, then chicken or gnocchi, then cheese or a pastry. The entire menu was in French, and I whiffed—I ordered the gnocchi thinking it’d be like a meat sauce, but there were little chunks of unidentified white fish in there, just floatin around with the bones still in them. The cheese was delicious, but it smelled really weird. My stomach hurt after I ate it.

Les Coquettes: Les Coquettes basically means little cast iron pots, so everything is served in one. I had a salad with bacon and eggs (seeing a pattern here), and then some vegetable coquette. I was imagining a veggie pot-pie, and there was no bread. No bread + My Meal = Unhappy me. Fortunately, there were baguettes on the table and my jeans were already too tight, so I really didn’t need a thing.

Le Reminent: We went here the last night, and I didn’t really get to eat since I got stomach flu while we were there. I ordered the steak and couldn’t eat it because I was sick—we skipped dessert so that I could go home and die. I also just realized that the table of people behind us were from Jersey and kept talking to us all throughout dinner. I bet they gave me the stomach flu. I wonder if they know Snooki?

Rech: Long story short, seafood bar. I watched my little sister eat 36 crabs and we had a 4 hour lunch. My sea bass sucked and tasted like a foot. Was jealous of everyone else’s meal. Hate when that happens. I felt like an outcast and wanted to leave, secretly cried in the bathroom (though I think that had more to do with my emotional morning of watching Coach Carter and Remember the Titans). They didn’t have Coca Cola light. The menu was only in French. The Frenchmen next to us spent their entire meal watching Mary try to shell her crab and making fun of how tacky we were. Good bread though.

Restaurant who's name I can't remember but had good bread: Appetizer I ordered mozzerella. There was a flower in my salad. I wanted to eat it. Main course I ordered the Merlin. I’m pretty sure they meant Marlin, but I thought it would be cool to try since Merlin is a powerful wizard and by eating Merlin, I would get magical powers. The only magical power I got was the ability to eat more bread. F.

There was also a meal that involved rice pudding, 5 lbs of meat and spitting up at the table. That will come shortly

Summary of my trip

1) Baguettes rule, all other bread can suck it.
2) African American sports movies are so relatable to my life.
3) Ashanti is annoying.
4) Paris rocks, I love cheese.
5) I wonder if Gary Bertier and Julius Campbell are friends in real life?

Fatties and Chicken Pot Pie

And I'm back...

Recipe and Restaurant Blogging begin again.

Diet starts Monday. That's what we all say, right? Well, this fatties' diet was supposed to start about 10 Mondays ago. But things got in the way...Dominos had two medium two toppings for 6$ each (basically free food), Mom and Dad offered to take me to dinner (free), sister turned 25 (free chance to watch family drink too much), and so on and so forth. So, this Monday was a new week. Egg whites for breakfast were followed by a delicious Tomato and Mozzerella sandwhich on olive bread from Empire Bakery. Tomatoes are healthy, but I hate tomatos, so I took them off, leaving me with a straight up cheese sandwhich, a.k.a. non-diet food. Me losing 10 pounds in 7 days was definitely not a possibility now (gaining 10 in 7, however, is always a possibility). Seeking solace, I turned to my thoughts to another Stout Southerner, know for her overuse of butter love for gravy: Paula Dean. Most of Paula's recipes can clog your arteries just by eating them, but there are a few that can be tweaked to be a little healthier. Her "Hurry Up Chicken Pot Pie" is quite delicious. I sent a text to 2 people, and fatties heard pot pie, and soon I had 7 people over to eat pot pie and watch Gossip Girl.

Side note: On Monday night I ate Chicken pot pie and watched a bunch of privileged Manhattan 18 year-old debutantes parade around, cuter and richer than I will ever be, then on Tuesday night I ate 2 slices of pizza while watching The Biggest Loser, which should be depressing, but seeing that I was skinnier than everyone on the show made me reach for another slice.

Below is the recipe for the Chicken Pot Pie from Foodtv.com

Ingredients

* 2 cups chopped cooked chicken breast
* 2 hard-boiled eggs, sliced (Honestly, you are such a CHUBBO if you a) eat hard boiled eggs, and b) put them in your pot pie).
* 1/2 cup thinly sliced carrots
* 1/2 cup frozen green peas
* 1 (10 3/4-ounce) can cream of chicken soup (use 98% fat free)
* 1 cup chicken broth (Use low sodium)
* Salt and pepper, optional
* 1 1/2 cups instant biscuit mix
* 1 cup milk (use skim)
* 1 stick melted butter (Doesn't really need it)

I add a bag of Green Valley Steamers potatos and green beans--cook them half the time that the instructions say then add them to the mix.

Directions

Preheat oven to 350 degrees F.

In a greased 2-quart casserole, layer the chicken, eggs, carrots, and peas. Mix the soup, chicken broth, and season with salt and pepper, if desired. Pour over the layers. Stir together the biscuit mix and milk, and pour this over the casserole. Drizzle butter over the topping. Bake until the topping is golden brown, 30 to 40 minutes.

If you have never been to Empire Bakery, go. There sandwhiches, while overpriced, are delicious. They all come on different bread freshly baked on site. My favorite is the Tomato Mozzerella or the Turkey with Apple. Most people at my office get Chicken Salad sandwhiches, but I don't care for mayo (surprising, right?), so I opt for ones with pesto or mustard.

Their Menu: http://www.empirebaking.com/lunch.html

My new quest will be for the best Morning Cocktail, as this weekend marks the time for the Dallas shitshow that is the St. Paddy's Day Parade. I need to be sufficiently cocktail-ed by about noon because I own no green and need to have little to no feeling in my limbs for when I get pinched. Any breakfast suggestions on/near Greenville? Must include any variation of vodka/tequila drink and breakfast meat. (BACON)
